The ‘Kaiserschnitzel’ – an icon of old Styrian cuisine

In the middle of the inn is the bread oven – the soul of the house, so to speak.

This is where one of the basic ingredients for the ‘Kaiserschnitzel’ is made – the breadcrumbs. The special wheat bread with a high proportion of crust is ground on site to produce a particularly crispy breading. The famous ‘Kaiserbrösel’ (bredcrumbs) can be bought in the farm shop to take home.

The meat for the schnitzel is taken from the so-called ‘Kaiserteil’, the lean topside of the pig, which is particularly tender and fine-grained. We only use pigs from our own farm. The schnitzel is then traditionally fried in lard, which makes it particularly tasty.

It takes several hands and a lot of skill to make our ‘Buchteln’ as fluffy and light as our guests know and love them. We spend a total of five hours working on 120 ‘Buchteln’. When the fresh ‘Buchteln’ come out of the oven, their sweet aroma fills the wine tavern and our guests’ mouths start to water, we know that this is the way we want to work
